Coffee Cake Muffins Vegan
Preheat oven to 350oF and line a muffin tin with paper liners.
Coffee cake muffins vegan. Line muffin tin with paper liners or spray with nonstick cooking spray. Into the same bowl add in the flour baking soda baking powder salt and cinnamon. In a small bowl mix together 1 tbsp chia seeds with 3 tbsp water and let sit 3-5 minutes or until a gel is formed this is called a chia egg.
Combine flour pumpkin pie spice baking soda salt and baking powder in medium bowl. Prepare 12-cup muffin pan with cupcake liners or cooking spray. Preheat oven to 350 degrees.
Pour the wet ingredients over the dry ingredients and stir until just moist. I make vegan buttermilk by adding 1 tsp of lemon juice per 1 cup of soy milk and letting it sit until slightly curdled. Fill the prepared muffin cups 34 full.
Grease or spray muffin tins. Generously grease and flour the bottom and sides of an 8x8 square baking pan or you can use cupcake liners and a muffin pan as we did here. When done remove from the oven and allow to cool slightly before serving.
In the bowl of an electric mixer add the margarine and cream cheese. Coffee cake doesnt traditionally have actual coffee in it but I like the flavor of it with the brown sugar. Add the flax egg vanilla and pumpkin.
Spread over the cake batter. Preheat oven to 350 degrees. Soak all the dates in a bowl of water for five minutes to soften.
